Innovative approach

The goal of this Bachelor’s is to train professionals who are specialized in culinary techniques, but also qualified to direct and manage gastronomic businesses, here or abroad. It is not simply about completing the training of the future chef. The goal is to enrich and develop professional profiles that are capable of designing and managing, in an integral way, the gastronomic offer of a business linked to the different types of catering.

We are training professionals who are capable of making profitable haute cuisine, but who also know how to establish marketing plans within the agro-food industry, direct research and development departments or devise instruments to generate the most appropriate type of customer service.

The tool to achieve your goals

The Study Programme for the Bachelor's Degree equips prospective students with a practical approach and solid foundation on which to build their future careers. Since Gastronomy and Management are not isolated disciplines, students receive a global vision that will allow them to assume their profession in the labor market.

On an academic level, the study programme is based on four knowledge pillars:

Gastronomy. By transferring knowledge on the food product, culinary techniques and the agro-food industry, students will delve in the nature, origin and traceability of food and beverages and the principles in their processes. The goal is to train students in the different disciplines of quality and safety of raw materials, the preparation and preservation of food, culinary techniques, processes and healthy eating from a unique and innovative point of view.

Science. Teaching students to develop a scientific method to internalize the importance of working with discipline and organization. Providing the tools to be able to develop an RDI department (research, development & innovation), which is essential in any company related to gastronomy.

Business Management. Taking a practical, applied approach to the hospitality business with the aim of equipping students with the tools they need to set up solid business projects and protect their financial viability. Students will learn about the market and its behavior. The Bachelor’s also includes subjects that provide economic knowledge for the optimal management of a company.

Languages. We encourage among students the use of English as a standard language while fostering the learning process with training activities that will take place in an international and multicultural environment.

1st Year: Building your knowledge base

First-year students acquire basic knowledge in relation to food handling and basic culinary processes. They will learn about marketing and the economic areas of the companies in the sector.

2nd Year: Acquiring specific tools and techniques

Students learn about properties, food traceability and chemical principles. They are introduced to the world of oenology and the culinary processes of foods. Content on law, finance and health issues is introduced in management related subjects.


3rd Year: Applying and perfecting your skills

Students learn about nutrition and dietetics. Creativity and innovation processes are reinforced. Students will also broaden their knowledge on oenology and wine-pairing. In Culinary Management, students learn about business models and the use of cost control software. In English, students acquire practical knowledge related to the world of business and the restaurant industry. Internships take place in top restaurants and high-level companies.

4th Year: Path to specialization

After completing the first three courses, students can choose one of the following specializations within the study programme:

Executive Chef Innovation - Research in Gastronomy

Students will learn the latest culinary techniques and trends in Gastronomy and will be introduced to the fields of research and creative processes.




Gastronomic Business. Food & Beverage.

With this specialization, students acquire knowledge and develop skills in the Management field while fostering entrepreneurship and leadership.


TFG – Final Project

The Bachelor’s Degree Final Project (TFG) consists of a memory or original study carried out by each student. The TFG integrates and develops the training and skills acquired during the Bachelor’s Degree.

Its purpose is to train students in searching, managing, organizing and interpreting relevant data to make judgments that include reflection on important issues of social, scientific, technological or ethic nature. Its completion facilitates the development of critical thinking, logical and creative judgement. A teacher will supervise the TFG and its completion is needed to acquire the title of the Bachelor’s Degree./p>


Internships and Employment

Students will have the opportunity to undertake work placements at local, national and international companies.

GASMA encourages a practical training. Apart from practical exercises on Campus, students have the opportunity to gain external academic work placements, thanks to several collaboration agreements between the UCH-CEU University and different companies.

From the first year of their degree course, students can begin to acquire professional experience by undertaking work placements in companies based nearby. As they acquire more knowledge and skills, students have the chance to apply for placements in increasingly competitive environments.


Career opportunities+

Gastronomy, the tourism sector and the agro-food company are booming and constantly evolving sectors. The constant emergence of new needs defines the present situation.

The new professional that the gastronomic sector demands, must have a great interdisciplinary training alongside the areas of gastronomy, management and science. There is no doubt that this new generation of professionals must emerge from a specialized university degree.

In this sector, students will be able to take operative executive positions such as executive chefs or culinary directors and respond to management profiles such as Food & Beverage Directors. Graduates will be able to hold senior management positions in a company, create a gastronomic or agro-food business of their own or advise other companies on the improvement of their processes.

The knowledge in the scientific and gastronomic area makes our students the perfect candidates for the agro-food industry in different areas: R & D, quality control and production management. In the purest scientific branch, students can develop a professional career devoted entirely to research.

The field of gastronomic university training also needs highly qualified professional profiles and university graduates, which is why this option is becoming another career opportunity for our graduate students.

A. Baccalaureate in the Spanish Education System

B. International Baccalaureate taken within or outside Spain

There are two different scenarios. Please select yours:

1. European union education system or with a specific agreement on educational matters

  • You have studied in Spain at a center that employs the educational system of an EU country.
  • You hold the European Baccalaureate or the International Baccalaureate.
  • You have studied outside Spain at a center that employs the educational system of one of these countries: Germany, Andorra, Austria, Belgium, Bulgaria, China, Cyprus, Croatia, Denmark, Slovakia, Slovenia, Estonia, Finland, France, Greece, Hungary, Iceland, Ireland, Italy, Latvia, Lichtenstein, Lithuania, Luxembourg, Malta, Norway, Holland, Poland, Portugal, United Kingdom, Czech Republic, Romania, Sweden or Switzerland.
  • In any of these events, you can enrol at UCH-CEU without having to do the university access test (PAU). You should contact the Universidad Nacional de Educación a Distancia (National University of Distance Education, hereinafter “UNED”) to obtain your university access credentials. We can perform this process directly. If you are interested, please write to admisiones@gasma.es.
  • If you are in one of the situations described and have also passed the university access test (PAU) and/or specific tests, you can enrol without having to get your qualification officially recognized.

  • University Access Credentials issued by the UNED.

  • Resolution of the Ministry officially recognizing the baccalaureate qualification or, in its absence, the application for official recognition.

The current regulations allow us to admit students on a conditional basis if we do not yet have a response from the Ministry of Education. This allows students to begin the course at the start of the year.

2. ADVANCED VOCATIONAL TRAINING OR EQUIVALENT

A. Advanced vocational qualification (CFGS) or FPII obtained in Spain

Pursuant to current legislation, all students who have completed a CFGS (Advanced Vocational Training Cycle) may access the University from any professional sphere, but in the event that demand exceeds the number of places available, the University will give preference to qualified candidates holding qualifications from the same branch of knowledge as the one studied on the degree course that they wish to follow.

Through UCH-CEU University, the Gastronomy and Culinary Management Campus has established various recognitions for credits obtained in the different branches of advanced vocational training cycles towards degrees from the university itself.

Credit recognition

Required documentation (ONLY AT TIME OF ENROLMENT):

  • Certificate issued by your High School proving that you completed the Advanced Vocational Training Cycle.
  • Proof of payment of the fees for the training cycle obtained.
  • ONLY if you are going to request recognition of modules taken at High School will you be required to provide a Certificate of your grades.

A. Older than 25/40/45 years

The admission criteria for students will be the grade obtained in the access test for people over 25 and 45 years of age.

B. Professional experience for 40+ year old candidates

Candidates with professional or workplace experience related to the course they wish to enrol on at our University and who have no qualifications that would enable them to access university (via Baccalaureate, CFGS, Bachelor's Degree, etc.). They must have turned 40 before 1 October of the academic year in which they wish to enrol.

Candidates will need to fill a simple online form and attach their employment history as well as their CV. The application will be evaluated and the candidate will be informed of the final decision.

  • Favorable admission resolution issued by the corresponding Dean.

4. UNIVERSITY QUALIFICATION

A. University studies previously completed in spain

In order to enrol you have only to provide a certified copy of the certificate for your university qualification: first-cycle degree (3-4 years), second-cycle degree (4-6 years), second-cycle architectural degree, second-cycle engineering degree, first-cycle architectural degree, first-cycle engineering degree or bachelor's degree.

Required documentation (ONLY AT TIME OF ENROLMENT):

  • Certified copy of the Certificate for your university qualification.
  • ONLY if you are going to request credit recognition for modules that have already been completed, will you be required to provide a certificate of your grades and a stamped transcript of the modules to be validated.
  • Photocopy of Spanish national identity document (DNI) (Spanish applicants) / Passport (non-Spanish applicants).

B. University studies previously completed outside spain

Regardless of the country where you completed the university studies, you have to provide official recognition of the qualification in order to be able to enrol at UCH-CEU University.

Official recognition has to be obtained from the Spanish Ministry of Education and may be of two types:

  • Official recognition of the academic degree: this is a fairly quick process and is designed for people seeking admittance to Spanish universities.
  • Official recognition of the professional applications of the qualification obtained abroad: this is a more complex process, which takes longer, given that it is designed for those wishing for their university qualification to have the same value in Spain as in its country of origin, for all purposes.

Conditional Admission

Required documentation (ONLY AT TIME OF ENROLMENT):

  • Resolution from the Ministry officially recognizing the qualification or, in its absence, the application for official recognition.
  • Photocopy of Spanish national identity document (DNI) (Spanish applicants) / Passport (non-Spanish applicants).

5. ACCESS BY TRANSFER OF ACADEMIC RECORDS (SAME BACHELOR'S)

A. Qualifications begun in Spain

If you have started university studies at another Spanish university, you can request a transfer in order to continue with the same course of Bachelor's degree, specifically, if you have passed a minimum of 30 ECTS credits at the University of origin.

Required documentation (ONLY AT TIME OF ENROLMENT):

  • A Certificate proving you have passed the university entrance exam
  • A document proving that you have requested a transfer of your academic record from your home university (for this you need the UCH-CEU Admissions Document)
  • Original certificate of grades from the University of Origin.
  • The syllabuses of the subjects you have passed and wish to validate.
  • Photocopy of Spanish national identity document (DNI) (Spanish applicants) / Passport (non-Spanish applicants).
  • Bank data forms (available on the Future Student's intranet).

B. Qualifications begun abroad. Validation.

In the event that you have begun university qualifications abroad you will need to have passed a minimum of 30 ECTS points in order to get a Partial Validation of Foreign Qualifications.

If you cannot reach the minimum number of credits (30 ECTS) you can always access with Pre-university studies and have the possibility to validate credits.

It is a relatively simple process but it is better to get in touch with us so we can give you more specific advice (admisiones@gasma.es) This will make the process quicker for you and help you to begin classes quicker. For example, we will be able to give you more information as well as the details you need to include in your documents you need to bring (Number of ECTS points, qualification system etc.) and/or language and validation requirements (legal translations, authorizations, etc.)

6. UNIVERSITY QUALIFICATIONS STARTED BUT NOT COMPLETED

A.Qualifications begun in Spain

If you have begun university qualifications in a Spanish university and wish to continue with the same Bachelor's Degree, you will need to have passed a minimum of 30 ECTS points in order to get a record transfer.

If you are studying in a Spanish university but want to start a different Bachelor's Degree, when you apply for admission you need to attach an informative copy of your academic record to carry out the validation study.

Required documentation (ONLY AT TIME OF ENROLMENT):

  • A Certificate proving you have passed the university entrance exam.
  • A document proving that you have requested a transfer of your academic record from your home university (for this you need the UCH-CEU Admissions Document)
  • Original certificate of grades from the university of origin.
  • The syllabuses of the subjects you have passed and wish to validate.
  • Photocopy of Spanish national identity document (DNI) (Spanish applicants) / Passport (non-Spanish applicants).

7. CONDITIONAL ADMISSION

In order to get students beginning classes as soon as possible, the law allows them to have a conditional admission. This will mean the student will be able to register at the university without handing in/having all the required documents. This special type of agreement between UCH-CEU and the student is agreed through the following rules and conditions:

  • You will only be able to apply for this status under the conditions of the Education Law LOMCE
  • The student will take on this status voluntarily and under their own responsibility
  • An essential requirement is that the student bring/hands in proof to UCH-CEU University that they have requested the credential/validation/official approval of their documents by the Ministry of Education or equivalent
  • The student’s enrolment will not be confirmed and will not take full academic effect until the Ministry of Education or equivalent approves their request and the student has provided the Administration Office with proof of this decision
  • During the time that the student has ‘conditional admission’ status, the student will have the same rights and responsibilities as other UCH-CEU students, except the following:
  • Until their enrolment has been made official they will not be able to receive any type of Certificate of their results or qualification from UCH-CEU that reflects the studies they are currently doing.
  • Until the student is officially enrolled they will not be able to request an academic record transfer to another Spanish university
  • In all certificates or documents that may be produced by UCH-CEU for the student they will have to certify that the student is of ‘conditional admission’ status.
  • As the student takes on voluntarily the status of ‘conditional admission’ they accept the risk that, ultimately, the Ministry of Education could refuse their request. If this situation occurs, the student will have to leave the university at the end of the semester, without claiming any compensation from UCH-CEU. The university will not be able to produce an academic certificate given that the student did not complete the legal requirements for accessing the university.
  • If the Ministry of Education or authorities deny the student’s request, UCH-CEU will not be able to refund any payments made for the enrolment, academic procedures, or any other type of payment, regardless of the time and /or the course the student concerned has taken.

International fee

The Hospitality Package is a set of services aimed at foreign students who study with us. Make the most of your Gasma experience!

The International Fee is a mandatory payment (€600) for all students resident outside Spain, regardless of the degree they are studying for. Validation and credit recognition

1. Students will pay 25% of the established price for the credits of the Bachelor's Degree they are studying in the following cases:

  • Recognition/Validation of modules completed at Universities other than University Centers belonging to the San Pablo CEU University Foundation.
  • Recognition of Free Selection credits for modules completed at other universities and courses or seminars taken or organized outside University Centers belonging to the San Pablo CEU University Foundation.

2. Academic record transfers: Students accepted to continue with a course that they have commenced at another university will be required to make a one-off payment, to cover adaptation of their academic record and recognition of their credits, in the amount of €430, except in the event that the transfer has been made from any University Centre belonging to the San Pablo CEU University Foundation.

3. Please check the deadline established for the purpose. No requests will be accepted after this deadline

Bonus

Enrolment Fee bonus for large families

Students who are members of a large families have the following bonuses:

  • Large family (general regime): 30% discount on the enrolment fee for each course.
  • Large family (special regime): 60% discount on the enrolment fee for each course.

In order to apply for the large family bonus, students must hand in the following document duly completed and provide an original and a copy of the updated large family card or family register.

Admission Application

The first step on your journey. Click on the application for your nationality to start the process. The admission application is an electronic form through which you can enter your information and attach all the necessary documents to start your admission process in a simple way. Our systems have all necessary security measures so that your information reaches us safely.

Admission Interview

The interview is conducted by one of the training area or admissions directors. Its main objective is to know the candidates in depth, assess their attitude, give advice and explain in detail the title’s training programme.

The interview touches on short and long-term personal and professional goals. It is also about evaluating the future student’s profile and discovering his/her passion for gastronomy. Knowing your past, present and future are key to determining if you are an ideal candidate to be part of Gasma. At Gasma we firmly believe in values ​​and tradition. That is why we look for special talents.

We are different, that is why we do not keep you waiting until June to let you know about the Admissions Committee’s decision. As a general rule, (with the exception of special circumstances) you will receive a notification via email 48 ​​hours after the interview.

Admissions Committee

The Admissions Committee meets every day to provide quick feedback to your candidacy and dissipate uncertainty. In addition to checking any documentation submitted, the Committee makes an assessment of your profile as a whole, with the help of the personal interview. We look for profiles that make a difference and inspire passion. The best talent is very important for Gasma: only with the best team in the classroom, excellence and success are achieved.

Place Reservation

Following the admission interview, the place reservation process will begin after the candidate receives a notification.

The notification will set out one of three scenarios for the candidates:

  1. That they have been selected and that there is a place available for them. In this case, the notification will be accompanied by a personalized Place Reservation Document telling them what they have to do to continue with the process. Following the simple instructions on this document, the candidate can reserve a place at the Bachelor's Degree in Gastronomy.
  2. That they have been put on the waiting list for access to the Bachelor's Degree. In this event, they will be informed as to the next steps to take.
  3. That they have not been selected because there are no available places and it is not expected that any places will become available or for reasons related to the evaluation of the candidate’s application.

This Scholarship can be requested by candidates of Spanish nationality. The minimum requirement is to have an average grade of 7 and be enrolled in all the credits of each academic year.

These scholarships for academic excellence represent a 50% reduction of the total cost of the course.

Number of scholarships for the academic year 2018/2019: 3

  • 1 scholarship for a student with Spanish passport and resident in Spain.
  • 1 scholarship for an international student with at least a C1 level of Spanish.
  • 1 scholarship for an international student with at least a C1 level of English.

The scholarship is renewed automatically each academic year, if the student has an average grade equal to or higher than 7.

Comunidad Valenciana Gasma Scholarship promotes an international gastronomic culture of high level in Castellón. This Scholarship offers an aid of 3,000€ for the first year. Regulation

This scholarship program rewards the effort of our Bachelor's Degree students and is based on the student's engagement to a maximum of 25 hours per week of collaborative tasks in activities of the University. These activities will be remunerated with a monthly payment. Students will use this income to cover part of the cost of their studies.

Recipients of this scholarship develop activities that are usually related to the skills they are learning in their degree, so in addition to economic benefits, they also get an opportunity to improve their training.


Application requirements

The award criteria depend on the different activity profiles. These will be available when students apply for the Scholarships. This financial aid is incompatible with any other type of work inside or outside the University. Students can only be grantees of this scholarship for 2 years (1 + 1).

BANCO SABADELL LOAN FACILITY

The department of Gastronomy at UCH-CEU University has reached several agreements with Banco Sabadell in order to be able to assist our students and graduates in financing their studies in full or in part. It is possible to obtain financial aid for a single year, for the entire bachelor's degree, for a master's degree and even to finance an Erasmus programme.
