The ideal profile of the master’s student is that of a graduate in the field of gastronomy or pastry. Although the admissions committee may accept candidates without a university degree who prove adequate experience.

  • Middle or higher degrees, technical studies or diplomas in gastronomy and / or pastry.
  • Non-regulated studies in gastronomy and / or confectionery carried out in other reference centers.
  • Experience in the gastronomy sector, whether in cooking, catering or pastry.

You will review the fundamentals of cooking and learn about the innovative techniques that have marked its evolution. Content

Cuisine

You will learn about structure and establish fundamental knowledge about raw materials: physical-chemical properties, functionality of molecules, processes and food technology in the world of cooking techniques.

You will know and apply the different techniques on raw materials that are trending in the world of contemporary gastronomy. You will delve into the study of the classic culinary techniques that have served as the basis for the cuisine we know today, until you reach the most current avant-garde techniques, which will also be treated in detail.

Sweet cuisine

Sweet cuisine, bakery and desserts continue to gain popularity and importance within the current gastronomic offer. Familiarize yourself with the bases and traditional preparations. Master the most innovative techniques and the perfect execution of the most avant-garde sweet and savory preparations.

You will explore the new trends in the world of restaurant desserts. You will know the importance of the formulation, as well as the staging and presentation of creations. You will have a practical vision of the concept of ‘creativity’ in desserts, through the experience of professionals in the sector.

Management and trends

A solid training in management is key to guarantee the success of a restaurant business. Learn all about the management tools applied to gastronomy and the kitchen processes that guarantee a more efficient organization. Anticipate the main trends to design a successful gastronomic concept.

You will delve into the most current gastronomic trends and proposals. We will provide a global vision that will cover both the conceptual and the technical point of view of culinary trends and will allow you to obtain the knowledge that will enable you to develop current and innovative gastronomic proposals. You will know the trends of haute cuisine and its evolution as well as the main trends of international cuisine and you will apply all the knowledge to emulate the elaborations and analyze them from different areas.

Master's final project

The master’s fnal project will allow you to put into practice all the knowledge acquired, by presenting a personal gastronomic proposal, adapted to current market trends. This project is an exercise in integrating all the content received.

Internships

In the gastronomic field, the practical aspect is of vital importance. In your internships, you will apply all the knowledge in a real work situation, which will enable you to enter the labor market highly prepared.

You will develop your skills and experience, professional praxis, without forgetting that you will come into contact with companies related to your training, thus improving insertion in the labor market and favoring employability.

Admission and fees

The period for submitting applications will remain open until the capacity of the training is completed (limited places). The training programs have several starting calls per academic year. The admission process to the first call closes when the enrollment places are exhausted, at which point the admission process for the next call begins. The program, dates, prices and teachers are subject to change. Gasma reserves the right to cancel the program if it considers that the requirements for it to be held successfully are not met.

In which language are the training sessions?
Gasma is located in Castellón de la Plana (Valencian Community), Spain. The nearest airport is Valencia International Airport (70 km). Our city is 2 hours by train from Barcelona and just under 3 hours from the capital of Spain, Madrid.

Where is Gasma located?
At the moment, master's programs and diplomas are taught only in Spanish. For the correct follow-up of the classes, a B2 level of Spanish is necessary. If Spanish isn't your first language, you'll be required to take a language test or certify your level.
I am an international student. What do I have to do?
Do you need help with the procedures prior to your arrival in Spain as an international student? Don't worry, our International Admissions Office has set up this package of exclusive services that will pave the way for you. You'll see how easy it is to settle in your new home!
This service, totally optional for international students, includes help in finding accommodation, assistance in managing residence documentation, collection and free first night of accommodation upon arrival in Spain, tourist information, leisure and culture so you can make the most of your stay, a transport card for your first trips around the city and the processing of a prepaid SIM card that will allow you to talk and surf the internet from the first moment.
Our international student body continues to grow. We have students from more than 75 nationalities. European students do not need a visa to come to study in Spain. On the other hand, non-European students must obtain the corresponding visa that includes authorization to stay in the country.
Students from certain countries are exempt from obtaining a visa as long as the stay in Spain does not exceed three months.
The visa will be requested and issued at the Spanish Consular Offices abroad. Once in Spain, Gasma offers non-EU students the optional International Fee service: with it, they can apply for the foreign student card through the Immigration Office or the corresponding police station within a month of their arrival.
Who will be the teachers?
Yes. The Master's Degree in Gastronomy and Culinary Management includes three months of internships that take place at the end of the classes. Here begins the best of your training. We offer you the possibility of choosing your internship among the hundreds of agreements that Gasma has with restaurants, workshops and gastronomic businesses throughout the Spanish and international geography. You can do your internship in capitals like Barcelona, Madrid, Santiago de Compostela, Lombardy (Italy), London, in countries like Austria, Denmark, USA, Canada, etc. You should know that many students get a job as a result of the internships they do. It is a unique opportunity to create your own network of contacts.
All our master's degrees and diplomas have a teaching staff made up of professionals with extensive experience and pedagogical capacity.
The organizational structure of our programs is made up of an academic coordinator who is joined by other expert professors from the different training areas of each degree to complete the teaching panel.
Depending on the title, each content module has the participation of knowledgeable experts: from chefs, food technology experts, nutritionists, producers, culinary business experts, managers, entrepreneurs, pastry chefs, sommeliers and dining room experts... All of them are part of our Culinary Team and will share their vision of gastronomy.
Does GASMA also offer accommodation?
To make your stay during your studies easier and more comfortable, Gasma maintains agreements with different organizations so that our students have nearby accommodation possibilities. Before your arrival you can choose and book your accommodation in an apartment, student residence, etc. Contact our admissions department to clarify any doubts regarding this topic.
