At just 27 years of age, David Gil is the head of pastry creativity at one of the trend-setting hospitality groups on the international gastronomic scene: elBarri, owned by the brothers Albert and Ferrán Adriá together with the Iglesias family.
Gil trained at the Hofmann School of Hotel Management and has worked at Can Jubany – at the age of 16 – Le Calendre (3* Michelin), the Bras-Laguiole restaurant (3*Michelin) or Mugaritz (2*Michelin), among others.
His experience in France has made him even more appreciative of dessert in the kitchen. For him, dessert completes the meal. For this reason, the utmost care must be taken to ensure that the experience does not decline, as the last sensation often has a great influence on the overall assessment of the meal.
