Diego Laso

International Cuisine

Owner and head chef of Momiji Restaurant, Mercado Colón, (Valencia).

Sushi man, specialist in Japanese cuisine, trained in restaurants such as Cru, Tastem or Sushi Home and under the orders of Albert Raurich, in 2 Palillos.

Diego Laso (Valencia, 1978) traveled to Japan for the first time in 2003 to study its language and culture, and it was then that he had his first contact with the country’s gastronomy. Upon his return to Spain, he continued working in some of the most renowned Japanese restaurants, thus deepening his training and specializing in sushi.

He also holds a degree in cooking from the CdT Valencia. He currently works as a cooking teacher and gastronomic consultant.
