Paco Méndez arrived in Barcelona in 2012 to partner with Albert Adrià in the adventure of the Niño Viejo and Hoja Santa restaurants.
Born in Mexico City in 1982. In 1998 he studied Tourism and Hotel Management, and in 2001 he began his studies at the Ambrosia Culinary Center. He also did stages with Juan Mari Arzak and Ferran Adrià at elBulli.
In 2006 he began training chefs at the same center where he studied and at the Alkimia restaurant-school, before moving on to gastronomic R&D for TapasBar Mexico in 2009. All this combined with gastronomic programs for television, lectures, courses and consulting.
